Vegan Smart Power Pancakes Almond Buckwheat Pancakes With Pecans And Banana

Dry Ingredients

1 Cup Organic Buckwheat Pancake & Waffle Mix by Arrowhead Mills

1/2 Cup Diced Pecans

1 Tsp Cinnamon

1 Scoop Vegan Smart Vanilla All-In-One Nutritional Shake

Wet Ingredients

1 Tsp Almond Extract

1/2 Cup Soaked Flaxseed (2 Tbs Freshly ground flaxseed in 1/2 Cup Water)

1 Tbs Melted Earth Balance Buttery Spread

1 Cup Water

1 Tbsp Grade A Maple Syrup

Toppings

Sliced Banana

Diced Pecans

Maple Syrup Cinnamon

Method

1️⃣ Begin by soaking 2 tbs freshly ground flaxseed in 1/2 cup of water, and set aside to soak for 15 or more minutes.

2️⃣ In a medium to large mixing bowl, mix dry ingredients.

3️⃣ After soaking, stir the flax seed in water mixture.

4️⃣ Add wet ingredients to the bowl, including the soaked flax seed.

5️⃣ Whisk ingredients together well.

6️⃣ Set stove top to medium heat.

7️⃣ Pour batter to form pancakes of whatever size you like. Cook first side until bubbles form on top, about three minutes; then flip and cook other side until it, too, is brown, about two minutes.

8️⃣ Now you’re ready to add your toppings!

9️⃣ Serve warm.
